This is the legendary cookie recipe of the great Maha, owner of the Magic Kitchen, and baker of wonders. Eat them and weep with joy.
Soften the butter by your chosen method. A pan on the stove on medium low works best. If you're in a hurry a microwave works too. You want the butter to be soft all the way through and slightly melted.
Add the softened butter, brown sugar, granulated sugar, vanilla extract, and eggs to an electric stand mixer and mix on medium low speed until you have a light creamy consistency. I find it easiest to just leave it mixing while you mix the dry ingredients.
Add the flour, cinnamon, salt, and baking soda to a separate mixing bowl. Whisk ingredients together.
A little at a time, add the dry ingredient mixture to the wet ingredients. Leave the electric mixer on a slow mix setting to incorporate the dry ingredients as they get added.
Either with the mixer on slow speed, or folding in by hand, add the chocolate chips to the cookie dough.
Add 2tbsp (standard cookie scoop) balls of cookie dough to a baking sheet. Bake between 11-13 minutes. You'll know the cookies are done when the bottom edge of the cookie looks set and has a nice light golden brown color.
